Menya Iroha (麺屋いろは) is one of the Halal restaurants in Toyama city and in some Asian countries. The local’s specialty, Black Ramen, is made as Vegan and Halal, and it is available as a souvenir!
What is Black Ramen?
When we hear Ramen, we may think the color of the soup is clear, brown or white. But as name indicates, Black Ramen in Toyama is really black.
It is said that the black Ramen has started in mid 20th century.
The soup is black because the noodle is made for the people who worked in construction site to reconstruct Toyama city which was destroyed during World War 2, because they needed to take salt efficiently. The color is black because they use more soy sauce.
Because the soup is saltier than other noodle, they can eat more rice as well. This is how they started Black Ramen in Toyama, which is now considered as local’s specialty.
How is their Black Ramen?
The instant Ramen is made as Halal as well as vegan, so there is no animal-derived ingredients. When we hear “Vegan”, it sounds like the taste is plain or tasteless, but this does not apply to this noodle!
The soup is not as salty as it looks, although the soup is almost black in color. What makes it unique is that they use black pepper to make the soup more flavorful, which makes it a perfect match with their chewy noodles.
Because instant Ramen does not have meat or vegetable, it is advisable to add some Halal meat toppings or fried vegetables like cabbage or beansprout, because the soup is so tasty that it makes it almost like a second main dish.

Some Halal grocery shop may have this product available like Tokyo Camii, but the best way to buy the product is online. If you are lucky to visit Toyama, their restaurant may also have souvenirs, too.
